Recipe of the week!

 Recently since having quit work and having more time at home to cook, I've started trying new recipes to shake up the boredom and give us some variety. I've tried several recipes that I really love, some not so much.. Just this week I discovered MyRecipes.com which takes the recipes from several different magazines and combines them all into one website for easier viewing and access. That really saves some time when it comes to magazine browsing.
 Earlier this week I tried a recipe for salmon burgers that I modified based upon the ingredients I had on hand. My husband absolutely abhors seafood of any kind and so it's a struggle to get him to eat any salmon which is not only healthful, but gives me a little variety for my palate. I'm not really very fond of seafood either, but my philosophy is that one can't say they don't like any kind of food like say beans or chicken until they've had it prepared several different ways. There are alot of different methods of cooking foods and a whole rainbow of spectrums when it comes to flavors to experience. So even though I haven't liked seafood other than shrimp and fish sticks since I was a child, I'm learning to cook it in ways that I do like and even learning to enjoy it a little bit.  That said, here's my new favorite recipe of the week!
  
 Salmon Burgers
1/4 c. mayonnaise
salt & pepper to taste
 1 tsp. lemon juice
1 T italian seasoning, divided
1 lb  salmon ( can use canned too)
1/4 c bread crumbs

 Combine mayonnaise, salt, pepper, lemon juice, and 1 tsp Italian seasoning in a small bowl. Cover and chill.
Preheat grill to medium temp.
 If using fresh salmon, remove the skin and cube. Place in a food processor and pulse to coarsely chopped.  If using canned, remove it to a container and make sure to remove bones.
  Add bread crumbs and remaining Italian seasoning. Combine until well mixed.  Form into 4 patties. Place them on grill and cook about 4 minutes. Carefully flip and cook another 4 or 5 minutes.  Remove and enjoy..... Don't forget the mayonnaise! 
   Makes 4 burgers.
